Maple in the Air & Pancakes on the Table


Good morning Reader!

We will be attending the maple festival this weekend in the Laurel Highlands, and you could not ask for better weather for it. Late spring temperatures have settled in around here, with a high of 74° expected! After a long stretch of cold mornings, sunshine like this feels like a gift.

With the smell of maple in the air across a large part of the country right now, I thought it would be fitting to share a few breakfast recipes that pair perfectly with this time of year.

If you keep a jar of sourdough discard in the refrigerator like I do, my The Best Fluffy Sourdough Pancake Discard Recipe is always a favorite. These pancakes cook up light, tender, and golden with just the right balance of flavor from the discard. A generous drizzle of maple syrup over a warm stack is hard to beat.

For those of you who enjoy baking with freshly milled grain, the Whole Wheat Pancakes Recipe with Fresh Milled Flour and Sourdough Option is another wonderful way to start the morning. The fresh flour gives them a deep, wholesome flavor, and you can make them with sourdough starter or without depending on what you have on hand.

If you want something a little more delicate, my Easy Sourdough Discard Crepes Recipe is perfect. These thin, buttery crepes come together quickly and can be filled with anything from maple syrup and butter to fresh fruit or homemade jam.
