Hey Reader! Last year I had 6 zucchini plants, and they gave me enough zucchini to feed an army. I am not exaggerating. This year I dialed it back to 4 plants, just to try to keep up with the amount of zucchini that comes in once they really start producing. But now I am already wondering if I should have planted more, because last year I made and froze at least 10 zucchini parmesans and zucchini lasagnas. They froze beautifully, and we literally just had the last one about a month ago. The shocking part is that nobody is tired of them! Even the kids love these meals, which says a lot when zucchini is involved, and everyone is already asking if I am going to do that again this year, which has me scratching my head and rethinking the amount of zucchini I planted. So if you are about to be swimming in zucchini too, these are two recipes worth keeping handy: The Best Zucchini Lasagna with Meat Sauce Recipe This zucchini lasagna is hearty, filling, and such a good way to use a lot of zucchini at once. It also freezes really well, which makes it perfect for putting away a few easy meals for later. Easy Bake Zucchini Parmesan With Garlic Recipe This zucchini parmesan is another one I love for freezer meals. It has garlic, sauce, cheese, and that cozy baked flavor that somehow still sounds good even after you have made it several times. And while the garden is starting to give us more summer vegetables, this cherry tomato confit is another good one to keep in mind: Cherry Tomato Confit Recipe with Garlic and Thyme It is made with cherry tomatoes, garlic, thyme, and olive oil, and it is a good way to use up tomatoes when they start coming in. You can spoon it over bread, eggs, meat, or toss it with sourdough pasta for a simple summer meal. I also wanted to share these peach recipes again because it looks like freestone peaches are starting to show up at the market. Low Sugar Peach Jam Recipe Without Pectin This peach jam is a good one if you want to put some peaches away without making an overly sugary jam.
