Hey there Reader! I was debating whether or not to jump into back-to-school recipes this week, but I think I am going to save those for next week. For now, it still feels like we are right in that late-summer season where peaches are everywhere, the garden is still giving, and there are plenty of little kitchen projects to keep up with. So this week I wanted to share a few recipes that fit right now. Low Sugar Peach Jam Recipe Without Pectin If you are finding peaches at the farmers market or roadside stands, this peach jam is such a good one to make while they are in season. It is made without pectin and has less sugar than a traditional jam, so the peach flavor really comes through. Last week I shared my elderberry syrup recipe, and once we have plenty of syrup made, I like to use some of it for tea. Elderberry Tea, Herbal Tea with Immune-Boosting Benefits This is a simple herbal tea to keep in mind as we start thinking ahead to the colder months. It is warm, comforting, and a good way to use elderberries once you have them on hand. We also have an abundance of jalapeños right now, and this bread is one of the places they are going: Sourdough Bread Recipe with Jalapeno and Cheddar This jalapeño cheddar sourdough is full of flavor and makes such a good savory loaf. It is delicious with dinner, toasted with butter, or served alongside soups, chili, eggs, or anything off the grill. How To Make Easy Fermented Pico De Gallo Salsa And if you have tomatoes, onions, peppers, or cilantro coming in, this fermented pico de gallo is a good one to try. It is fresh, tangy, and a simple way to turn garden ingredients into something you can use with tacos, eggs, grilled meat, or chips. Best Homemade French Vanilla Bean Ice Cream Recipe And because it is still summer, homemade vanilla ice cream absolutely belongs here. This one is rich, creamy, and perfect with peach jam, fresh fruit, cobbler, pie, or just by itself. So before we move into back-to-school recipes next week, I hope this gives you a few late-summer ideas to enjoy while the peaches are ripe, the jalapeños are coming in, and there is still a little summer left to savor. Hey Reader! Last week I told you we were getting ready to level the ground for our above ground pool, and Theron did an amazing job. He rented a skid steer and had the pool area dug out in about 4 hours. And since we had the machine for the weekend, he also made me a few more garden beds because I made an impromptu purchase of over 80 strawberry plants with no place to put them.
